In your picture of the TUBA seller from the Philippines, Tuba, is the nectar of the coconut flower. (not Coconut milk)The flower is tied closed, the end is sliced off, and a cup is put under the flower to catch the nectar. the nectar is gathered every day, It ferments naturally, the first day it tastes like sour orange juice, or grapefruit juice, each day it gets stronger, and the alcohol content increases, in a week or so it becomes vinegar. The vinegar is excellent, and makes great salads. When we come home we always bring tuba vinegar, everyone loves it!
