  • Hello Dave! It was a very enjoyable ramble through a city I have never been to - but for sure it would make a great place to visit. The brick colors are simply marvellous, and you cought them in the very best sunlight. How I wish I could leave - but hey, I'm just back from a trip to France... so I better be patient!   • The French call Toulouse 'The Pink City' because most of the old town features rose-coloured brick buildings and mansions built by prosperous dye and grain merchants in the 15th and 16th Centuries. Best of all, the town changes colour depending on the time of day. As the locals put it: "Pink at dawn, red at noon and purple at sunset." Toulouse is the principal city of South-Western France, but guide books seem a trifle confused as to where it actually belongs...some put it in the Perigord (home of the fabulous black diamonds known as Perigord truffles), while others say it's in Languedoc-Roussillon, a region that has been a tinderbox of historical drama since at least the 12th Century. What everyone does agree on is that the city has some stunning museums and art galleries, great shopping, boisterous street and cafe life, two magnificent cathedrals, some of the prettiest squares and parks in metropolitan France, numerous imposing bridges spanning the Garonne River that runs past the city and a fine regional cuisine - including the world famous Toulouse pure-pork-and-garlic sauage and the legendary Cassoulet, the pork and/or mutton and/or duck and white bean stew that is one of the glories of French peasant cooking.
