Album Description:

Cebu City is well-known in the Philippines for its best tasting dried fish. Tabuan Market’s strong fish odor didn’t bother me one bit, as I am accustomed to eating “daing” for breakfast. My favorite? Unsalted “danggit” & “palad”!

    • Dear Carol, Before anything else, I’d like you to know just how happy I am to hear from you! Now let me address your very interesting query as regards dried fish for breakfast. For one born & raised in the Philippines, I do love the taste & flavor of dried fish (“daing na isda”, or simply “daing”). But that’s because both my parents came from a small Visayan island province (Romblon) where the main source of commerce comes from fishing, coconut harvest and marble stone quarry. It is from my folks that I have learned to enjoy eating all forms of fish preparation – dried fish, fish cooked in vinegar & veggies ("paksiw"), curried fish, fish in sour soup or “sinigang”, fish in chopped tomatoes & tomato sauce called “sarciado”, fried seabass in sweet-sour sauce called “escabeche”, steamed fish, grilled fish, fresh fish salad (“kinilaw”) with chopped ginger, onions & hot chili peppers mixed in special coconut vinegar, etc. You name it, I think I’ve tasted them all! Now dried fish or “daing” for breakfast fare can be similar to your version of bacon & eggs. But instead of using bacon, we just fry dried fish (any of those you saw in my Tabuan Market album). For the “daing danggit” (sinagid fish or rabbitfish), I normally deep fry them in a wok until it becomes crisp. This normally takes just a minute to fry as they are quite thin & easily cooked. I serve it with coconut vinegar (in a separate dipping saucer). Also, in another small plate, I thinly slice ripe tomatoes & onions & mix them up to go with the crisp-fried dried fish. Of course, there’s fried eggs and fried (or boiled) rice to go with the fish dish. There! That’s added education for you, dear friend, about Philippine culinary experience.     • Mary Ann, This has been a real education for me this morning. I have never eaten dried fish, nor do I think I even want to. And you eat it for breakfsst? Oh my. I have to admit that fish is not my favorite food to begin with. This is so interesting. So, how do you prepare it for breakfast? And what do you eat with it? I can't even imagine eating fish in the morning. Sometimes I stop at the supermarket on my way to work in the morning and when I walk past the fish in the cases and the odor right there, I think to myself....that has to be a difficult job. Learning about other peoples' way of life is so fascinating. Please tell me more about breakfast. I think I would lose lots of weight if I came to visit....LOL Hugs, Carol

    • Wow! I have never been to a market like this and it makes my mouth water now that I am on extremely low fat diet. All I have to do now is prepare a side order of veggies and I am good to go. I just hope that they don't salten it too much :). Thanks for sharing, Mary Ann!

    • Wow! A real to goodness dried fish market. I don't remember ever been to one. Now that I am on extremely low fat diet, I think I can get along with this place. I just hope they don't salt it too much! Thanks for sharing, my friend! All I have to do now is prepare a veggie side. Yummy!
